I made THIS!
and it is delicious :)
I based it off this recipe:
But I used different vegetables. I used brocoli, zucchini, peas, carrots, and sweet onions…and two kinds of mushrooms. Thinking about it now, sliced almonds would be kind of delicious and add a little crunch. I seasoned with sea salt, thyme, and red pepper flakes.
Instead of the sauce listed, I used cream of mushroom soup.
Since I’m not vegan/gluten free I also added a little sour cream to my mashed sweet potatoes.
This meal is SO GOOD!
I ended up having leftover roasted vegetables and mashed potatoes because it didn’t all fit in my pan. I put them in containers and froze them for later since I will be eating this all week.
And because I can’t just do one thing…I made this too.

I made this recipe as directed. I LOVE CASHEWS and they make this SO good! Wegmans was out of Nutritional yeast so I just bought a packet that was sitting next to it’s spot on the shelf, hope that was ok!
**NOTE » Just did some online research, which would have been helpful to do earlier, but the yeast I bought IS NOT the same as nutritional yeast. After reading what it is, it sounds like I could have made the recipe without it, it just adds nutritional value. Sooo now I have to throw this whole dish out for the fear that I’ll have some crazy reaction to it (since I’m not trying to bake it in bread so it’s in it’s raw form). SO DISAPPOINTED! I’ll definitely make this again when I buy more ingredients - without the yeast. Ugh.**
I have to admit, my ways of making things without the right tools is getting frustrating. I used a blender as a food processor (Went with a Kitchen Aid when I returned the Ninja) and ehh it’s not meant to be a food processor! With enough water/olive oil it did eventually puree the mix but it was a pain in the ass. I really just need to buy a food processor. Problem is, my birthday isn’t until September and I’m trying to get a car so I need to stop spending money.
So if anyone is selling a food processor, let me know!
Oh on a side note, Wegmans really needs to organize the Nature’s Marketplace better. I’ll take responsibility for half of this in that I should be better educated on what things are and where they should be. However, when I look up on the website and it’s market “Nature’s Marketplace” that doesn’t help me. As a newbie, it would be nice to have better labeling of the aisles. How the heck am I supposed to know where YEAST is over there?? Also - why are the aisles so damn close together? This is my demand for more attention spent on this area!!
